Ingredients

  • 4 wild Alaskan sablefish portions (5-6 oz each), thawed
  • 3 tablespoons white (shiro) miso paste
  • 2 tablespoons mirin
  • 1 tablespoon sake (or dry white wine)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon freshly grated ginger
  • Sesame seeds and sliced scallions for garnish

Instructions

  1. Make the miso glaze: Whisk together miso paste, mirin, sake, rice vinegar, sesame oil, and grated ginger until smooth.
  2. Marinate the sablefish: Pat the sablefish dry and place in a shallow dish. Coat all sides with the miso glaze. Cover and refrigerate for at least 30 minutes (or up to 24 hours for deeper flavor).
  3. Preheat air fryer: Set your air fryer to 380°F and preheat for 3 minutes.
  4. Wipe excess marinade: Gently wipe off most of the excess miso paste from each portion (leaving a thin layer). This prevents burning and ensures a smooth caramelized glaze.
  5. Air fry: Place sablefish skin-side down in the basket. Cook at 380°F for 8-10 minutes until the glaze is caramelized and the fish is opaque throughout.
  6. Garnish and serve: Top with sesame seeds and sliced scallions. Serve with steamed rice and quick-pickled cucumbers.
