- Salmon Salad Sandwiches: This is our first go-to for next day lunches, and is always a hit. Just flake the salmon into a bowl sans skin (you can save the skin and crisp it up for a tasty garnish). Add mayo, capers, salt, pepper and a little Dijon if you’re feeling spicy. Spread onto your favorite bread and top with lettuce, tomato, sliced red onion or whatever crispy veggies you have on hand.
- Salmon Omelet: This is an easy breakfast go-to. On the weekends when we have extra time to lounge around in the morning, we love a good omelet.
