Ingredients

  • 1.5 lbs wild Alaskan Pacific cod, cut into 2-inch chunks
  • 4 slices thick-cut bacon, chopped
  • 1 large onion, diced
  • 3 celery stalks, diced
  • 3 medium Yukon Gold potatoes, cubed
  • 1 cup frozen corn kernels
  • 3 cups seafood or chicken stock
  • 1 cup heavy cream
  • 2 bay leaves
  • 1 teaspoon Old Bay seasoning
  • Salt and freshly ground black pepper
  • Fresh dill and oyster crackers for serving

Instructions

  1. Sauté the bacon: Set the Instant Pot to Sauté mode. Cook chopped bacon until crispy (about 4 minutes). Remove half for garnish, leave the rest with rendered fat.
  2. Build the base: Add onion and celery to the pot. Sauté for 3 minutes until softened. Add potatoes, corn, stock, bay leaves, and Old Bay. Stir well.
  3. Pressure cook the base: Lock the lid, set the valve to sealing, and cook on High Pressure for 5 minutes. Allow a quick release.
  4. Add the cod: Remove the lid, switch to Sauté mode. Gently stir in the cod chunks and heavy cream. Simmer for 4-5 minutes until the cod is opaque and flakes easily.
  5. Season: Remove bay leaves. Taste and adjust with salt, pepper, and additional Old Bay as needed.
  6. Serve: Ladle into bowls, top with reserved crispy bacon, fresh dill, and a side of oyster crackers.
