The air fryer's dry heat creates a crispy exterior on wild Alaskan cod while keeping the delicate inside tender and moist. Without deep-frying's excess oil, you get the satisfaction of fish and chips in under 20 minutes. Perfect for weeknight dinners that feel indulgent but are actually heart-healthy. Serve with homemade tartar sauce or aioli for the complete experience.

Ingredients

  • 4 cod fillets (6 oz portions), about 1.5 lbs
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 tsp Old Bay seasoning (or paprika + cayenne)
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt
  • 2 eggs, beaten
  • 2 tbsp milk
  • Cooking spray or light coating oil
  • Lemon wedges for serving
  • Tartar sauce or lemon aioli (for serving)

Instructions

  1. Prepare the breading station: Set up three shallow bowls. In the first, combine flour with salt and pepper. In the second, whisk together eggs and milk. In the third, combine panko breadcrumbs with Old Bay, garlic powder, and additional salt and pepper.
  2. Pat the cod dry: Use paper towels to dry the cod fillets completely. Moisture prevents crispy breading.
  3. Bread the cod: Working with one fillet at a time, coat in flour mixture, shaking off excess. Dip in egg mixture, then coat thoroughly in panko mixture, pressing gently so breadcrumbs adhere.
  4. Prepare air fryer: Preheat air fryer to 400°F for 3 minutes. Lightly spray the basket with cooking spray to prevent sticking.
  5. Air fry: Arrange breaded cod in a single layer in the basket without overlapping. Lightly spray the top with cooking spray for extra crispiness. Air fry for 10-12 minutes until golden brown and fish flakes easily at the thickest part (145°F internal temperature).
  6. Check for doneness: The breading should be golden and the fish should flake apart easily. If the exterior is done but interior needs more time, reduce heat or cook an additional 1-2 minutes.
  7. Serve: Transfer to plates and serve immediately with lemon wedges and your choice of sauce.

Chef's Tips

  • The coating spray is crucial for crispiness. A light oil spray on top transforms the texture significantly.
  • Don't overcrowd the air fryer basket—for best results, cook in two batches if needed.
  • Panko breadcrumbs deliver superior crunch compared to regular breadcrumbs. The larger flakes stay crispy.
  • Make a quick lemon aioli: mix mayo, lemon juice, minced garlic, and a pinch of salt for a restaurant-quality sauce.
