Rainbow Citrus Baked Salmon

Ingredients

  • 1 whole Popsie Sockeye Salmon Fillet

  • Coarse sea or kosher salt

  • Paprika

  • Garlic powder

  • Onion powder

  • Cayenne pepper

  • 1/2 lime

  • 1/2 lemon

  • 1/4 orange
  • 1/4 grapefruit

 

Directions

  1. Preheat oven to 400 degrees F.
  2. Evenly slice your lime, lemon, orange and grapefruit.
  3. Lay whole salmon fillet on a baking sheet. Season the fillet with spices liberally, and then layer citrus slices on top overlapping slightly. To get the rainbow look, start with the grapefruit at the large end of the fillet, and lay your fruit in even rows.
  4. Bake whole fillet for 12 minutes, or until salmon flakes easily with a fork.
  5. Serve and enjoy!

Recipe Note

You can use any kind of citrus for this recipe, the more colorful the better! Try swapping the grapefruit with blood orange for a deeper red coloring your pattern.
