  • 4 wild salmon fillets
  • 2 lemons, sliced
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste

Directions:

  1. Preheat your grill to medium-high heat.
  2. Season the salmon fillets with salt and pepper.
  3. Place the salmon fillets on the grill, skin side down.
  4. Grill for 4-5 minutes, then flip the fillets over.

For the aioli:

  • 1/2 cup mayonnaise
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon fresh lime juice

Gather these ingredients: 

  • 1-pound wild salmon fillet
  • 1 lemon, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper
  • 2 sprigs of fresh rosemary
  • 4 sheets of aluminum foil, large enough to wrap the salmon fillet

Directions: 

  1. Preheat the oven to 375°F.
  2. Place the salmon fillet in the center of a large sheet of aluminum foil.
  3. Sprinkle minced garlic over the salmon.
  4. Drizzle the olive oil over the salmon, then season it generously with salt and pepper.
  5. Lay the lemon slices over the top of the salmon, then place the rosemary sprigs on top.
  6. Bring the sides of the foil up and over the salmon, then fold the edges together to create a sealed packet.
  7. Place the packet on a baking sheet and bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Carefully open the foil packet (watch out for the hot steam!), and serve the salmon hot.

5. Wild Salmon and Potato Salad

If you want something light and fresh, this wild salmon and potato salad gets the job done. It's filling, but wonderfully light. 

Here's what you'll need:

  • 1 8-ounce wild salmon fillet
  • 1 pound of baby potatoes, quartered
  • 3 tablespoons of olive oil
  • The juice and zest of one lemon
  • 1 shallot, minced 
  • 1 tablespoon of Dijon mustard 
  • 1 teaspoon of horseradish 
  • ½ of an English cucumber, diced
  • 3 celery ribs, diced 
  • 2 tablespoons of chopped fresh dill 
  • 6 cups of arugula
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400°F.
  2. In a small bowl, whisk the olive oil, lemon, shallot, Dijon mustard, horseradish, and salt and pepper. 
  3. Line a baking sheet with parchment paper, then arrange the salmon fillet on the prepared baking sheet.
  4. Season the fillet liberally with salt and pepper.
  5. Bake for about 15 minutes or until the salmon is cooked through.
  6. While the salmon is cooking, use a large pot to steam the potatoes until they're tender, about 12 minutes.
  7. Transfer cooked potatoes to a bowl lined with a paper towel, letting them cool completely.
  8. Remove the salmon from the oven and flake it with a fork, setting it aside to cool.
  9. In a large bowl, combine the cucumber, potatoes, celery, and dill. Pour the homemade dressing on top and toss until everything is well-coated.
  10. Make a bed of arugula, then arrange the potato salad on top.
  11. Top with flaked salmon and serve immediately, or store in the fridge for up to 3 days.
