Ingredients
- 2 - 3 (6 oz portions ) Popsie’s Wild Caught Alaska Halibut
- 2 tbsps vegetable oil
- 4 - 8 tortillas of your choice
- 8 oz fresh washed greens
For the cucumber salsa
- 1 seedless cucumber, diced
- 1 red pepper, diced
- 1 small red onion, diced
- 1 yellow pepper, diced
- 1 tbsp lime juice
- 1 tsp salt
- ¼ cup sour cream
- ¼ cup tomatillo salsa, medium
- ¼ cup crumbled Mexican cheese (cotija)
- ¼ cup fresh cilantro, chopped
Fish seasoning
- 1 tbsp chili powder (ancho or New Mexico preferred)
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp kosher salt
- ½ tsp garlic powder
- ½ tsp onion powder
Directions
For the fish
-
Thaw fish in fridge before using. Take fish from package and pat dry with a paper towel. Set aside.
-
Prepare Halibut seasoning by mixing all seasoning ingredients together in a small bowl.
-
Cover each side of the Halibut generously with seasoning. Sear both sides of Halibut in a hot pan with oil about 3-5 minutes on each side until done. You can tell fish is done if it flakes easily and is white throughout.
For the salsa
-
Add all ingredients from cucumber salsa list and mix in a bowl.
Assemble tacos
-
Warm your tortillas over open flame on stove. Add fresh greens, flaked halibut, and spoon cucumber salsa on generously. Add your favorite hot sauce if you want!
