1. Grilled Wild Salmon with Lemon and Dill

Grilled wild salmon is a classic dish that's perfect for summer barbecues or quick dinners. To make this recipe, you'll need:

  • 4 wild salmon fillets
  • 2 lemons, sliced
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste

Directions:

  1. Preheat your grill to medium-high heat.
  2. Season the salmon fillets with salt and pepper.
  3. Place the salmon fillets on the grill, skin side down.
  4. Grill for 4-5 minutes, then flip the fillets over.
  5. Grill for an additional 4-5 minutes, or until the salmon is cooked through.
  6. Remove the salmon from the grill and place it on a platter.
  7. Top the salmon with lemon slices and chopped dill.

On the side, consider a vegetable, small salad, or wild rice. 

2. Baked Wild Salmon with Garlic and Herbs

This recipe is perfect for those who prefer to bake their wild salmon. Here's what you'll need:

  • 4 wild salmon fillets
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 375°F.
  2. Season the salmon fillets with salt and pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper.
  4. In a small bowl, mix together the garlic, parsley, and thyme.
  5. Spoon the garlic mixture over the salmon fillets.
  6. Bake the salmon for 15-20 minutes, or until the salmon is cooked through.

3. Wild Salmon Cakes with Cilantro Lime Aioli

Wild salmon cakes are a delicious and healthy alternative to traditional crab cakes. Here's what you'll need to make the cakes:

  • 2 wild salmon fillets
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 1/4 cup diced red bell pepper
  • 1/4 cup panko breadcrumbs
  • 1 egg, lightly beaten
  • Salt and pepper to taste

For the aioli:

  • 1/2 cup mayonnaise
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 375°F.
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. Bake the salmon for 15-20 minutes, or until the salmon is cooked through.
  4. Flake the salmon into a large mixing bowl.
  5. Add the red onion, celery, red bell pepper, panko breadcrumbs, egg, salt, and pepper to the bowl.
  6. Mix well and form the mixture into small patties.
  7. Heat a large skillet over medium-high heat.
  8. Add the patties to the skillet and cook for 3-4 minutes on each side, or until golden brown.
  9. To make the aioli, mix together the mayonnaise, cilantro, lime juice, salt, and pepper in a small bowl.
  10. Serve the salmon cakes with the aioli on the side.

4. Baked Wild Salmon in Foil

This baked wild salmon is moist, flavorful, and incredibly easy to make. Plus, it's a healthy and delicious way to enjoy wild salmon.

Gather these ingredients: 

  • 1-pound wild salmon fillet
  • 1 lemon, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper
  • 2 sprigs of fresh rosemary
  • 4 sheets of aluminum foil, large enough to wrap the salmon fillet

Directions: 

  1. Preheat the oven to 375°F.
  2. Place the salmon fillet in the center of a large sheet of aluminum foil.
  3. Sprinkle minced garlic over the salmon.
  4. Drizzle the olive oil over the salmon, then season it generously with salt and pepper.
  5. Lay the lemon slices over the top of the salmon, then place the rosemary sprigs on top.
  6. Bring the sides of the foil up and over the salmon, then fold the edges together to create a sealed packet.
  7. Place the packet on a baking sheet and bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Carefully open the foil packet (watch out for the hot steam!), and serve the salmon hot.

5. Wild Salmon and Potato Salad

If you want something light and fresh, this wild salmon and potato salad gets the job done. It's filling, but wonderfully light. 

Here's what you'll need:

  • 1 8-ounce wild salmon fillet
  • 1 pound of baby potatoes, quartered
  • 3 tablespoons of olive oil
  • The juice and zest of one lemon
  • 1 shallot, minced 
  • 1 tablespoon of Dijon mustard 
  • 1 teaspoon of horseradish 
  • ½ of an English cucumber, diced
  • 3 celery ribs, diced 
  • 2 tablespoons of chopped fresh dill 
  • 6 cups of arugula
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 400°F.
  2. In a small bowl, whisk the olive oil, lemon, shallot, Dijon mustard, horseradish, and salt and pepper. 
  3. Line a baking sheet with parchment paper, then arrange the salmon fillet on the prepared baking sheet.
  4. Season the fillet liberally with salt and pepper.
  5. Bake for about 15 minutes or until the salmon is cooked through.
  6. While the salmon is cooking, use a large pot to steam the potatoes until they're tender, about 12 minutes.
  7. Transfer cooked potatoes to a bowl lined with a paper towel, letting them cool completely.
  8. Remove the salmon from the oven and flake it with a fork, setting it aside to cool.
  9. In a large bowl, combine the cucumber, potatoes, celery, and dill. Pour the homemade dressing on top and toss until everything is well-coated.
  10. Make a bed of arugula, then arrange the potato salad on top.
  11. Top with flaked salmon and serve immediately, or store in the fridge for up to 3 days.
